A Forest, a Family, a Philosophy

Where It Begins

Coldwater Maple Company is rooted in our family homestead, nestled among thousands of majestic sugar maples in the heart of Simcoe County, Ontario.

Here, we care for a flock of Serama and Wyandotte chickens, nurture gourmet forest mushrooms — Wine Caps, Shiitakes, Oysters — in our woods, and carry forward the traditions of small-batch, artisanal maple syrup making.

Our specialty offerings — from whisky-oak aged maple syrup to first-harvest releases — speak to discerning palates who value provenance and craft. Each small batch captures a moment in time, even the extraordinary ice storm of 2025, preserved in flavour and story.

Maple Quality Alliance

Coldwater Maple Company is a founding producer of the Maple Quality Alliance (MQA) — Ontario's artisanal maple standard, inspired by VQA, built for the next generation of maple craft.

The MQA is a collaborative initiative among Simcoe & District maple producers, working toward appellation, terroir recognition, lab testing, QR traceability, and a meaningful quality premium for Ontario artisanal maple.
