Single Forest · Simcoe County, Ontario
Slow, Small & Secretly
Small-batch maple syrup, homestead baking, and weekend farmstand goods from a working forest in Severn Township — crafted with care, bottled with intention.
Every drop traces back to one sugarbush in Simcoe County. Terroir you can taste.
Limited production. Hand-finished. Bottled the moment it's ready — never before.
Our sugarbush stays wild. No shortcuts. No chemicals. Just sap, fire, and patience.
Founding producer of the Maple Quality Alliance — Ontario's artisanal maple standard.
Bakery & Farmstand
Sheila’s Cozy Acres brings from-scratch bread, bagels, maple cinnamon rolls, granola, and seasonal homestead baking to the Coldwater Maple farmstand.
Every weekend from sunrise to sunset, the farmstand becomes the shared table for our little homestead: Coldwater Maple syrup from the forest, and Cozy Acres baking from Sheila’s kitchen.

From the Sugarbush
Each batch is a moment in time — shaped by weather, soil, and season.
Our signature late-harvest amber. Rich, complex, with a long finish. Single-forest Simcoe County terroir in every bottle.
Aged in whisky oak barrels. Smoky, complex, extraordinary on charcuterie boards, cheese, and desserts and cheese boards.
Seasonal maple-inspired pantry specials. Ask about current availability and age-appropriate options.
The Coldwater Story
Coldwater Maple Company lives in a working forest in the heart of Simcoe County — among thousands of majestic sugar maples, forest mushrooms, free-range hens, and a philosophy that slow craft produces something irreplaceable.
We tap, boil, and bottle. Nothing more. The result is a syrup that carries the character of its forest — mineral-rich, complex, and shaped by the weather that year.
We never rush the boil. The right grade emerges at the right moment.
Limited bottles per batch. When it's gone, it's gone.
Our forest is not a destination. It's a working landscape, quietly producing something extraordinary.
